Eat, Drink, & Be Mary!

Fabulous Friday!

Well, folks, this week has been hectic but enjoyable!  In addition to the everyday schedule of life we chose to enroll our daughter Dottie (4) in an International school starting August 1st.  So, in between swimming lessons, naps, meal preparation, and shopping we toured the school one day and returned with moo-lah and an application later in the week.

As a completely unexpected turn in our family’s life, we adopted a new member this week! I saw her advertised on the local Flea Market page b/c she was a little too rambunctious for her original family’s Yorkie. We set up a time for her and the kids to mingle and get to know one another. It was love at first sight, mostly. She growled at Elyas (our youngest at 21 months) because I don’t think she knew what to think of him. We all just laughed. Now? They’re best buds. She anxiously waits for him to wake up and play with her. Dottie was a little timid, as though she wasn’t sure *how* to play with a dog but she’s getting better every day. The wee pup’s original family had named her Fiona but we chose Fiji (to stay close to what she had been used to but make it easier to say and, well, sound more like a dog’s name, honestly). It is as though she has always been a part of our family. She is calm and listens well. She’s goofy and has the funniest facial expressions. She snores like an old man. LOL We love her.

Friday afternoon and evening I worked on a lovely stuffed pepper recipe from Bill & Haley over at The Food Lovers’ Primal Palate - Spicy Stuffed Peppers

This was my first attempt at a paleo stuffed pepper recipe as my favorite uses rice.  The cauliflower worked perfectly! I added the cauliflower in almost immediately after the onions and garlic to avoid using the microwave. The peppers turned out a little to crunchy for our taste. I will cover with foil and bake for longer the next time and perhaps add a can of diced tomatoes over the top of the filling before crowning them with the pepper tops. We will definitely be using this recipe again, though!
