My amazing Hubs spoiled me all weekend doing most of the cooking and clean-up. Now, he’s back to work and so am I! This morning I made another batch of both the pumpkin breakfast cookies and chewy molasses ginger cookies (see previous post). This time I omitted chocolate chips from the breakfast cookies and increased the shredded coconut so they are much more paleo! As for the molasses, well, it originally called for 3 Tbsp molasses and 2 Tbsp maple syrup or honey and I went with ALL molasses - why not, right? It’s delicious!!
I also made a batch of spice rub (the link is the whole beef recipe but I make batches of it and keep it around for many uses!) that we usually use on beef but I have heard reports is also fab on chicken wings and a batch of sausage spice (a new one I haven’t tried, yet) that I plan on using to make scotch eggs.
I ate pieces of the cookies for breakfast :) then had left-over pumpkin chicken chili with a hot dog for lunch. I need to eat some veggies!
On a personal note, my Mom & Dad might be coming to visit SOON and I’m super excited!!!
