Eat, Drink, & Be Mary!
Chai-Spiced Pancakes and Pumpkin Spice Maple Syrup*
I used the delicious Paleo Spirit pancake recipe as a base (b/c it is fabulous!)
I added the following for some warm, Autumn flavor (and b/c I can’t leave a recipe unchanged! More Spices!!)
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons ground ginger
1 teaspoon ground cloves
1 teaspoon ground allspice
a couple pinches of black pepper
Just add the extra spices at the point in the recipe when it calls for cinnamon in the dry ingredients.
For the syrup
In a small saucepan combine:
Approximately 6 ounces of maple syrup
3 Tbsp mashed/puréed pumpkin
1 teaspoon vanilla extract
1 teaspoon pumpkin pie spice (you can make your own) - add more or less to taste
50 grams of KerryGold butter (optional, of course, if you’re not eating dairy)
Heat all of this over very low heat until butter is melted, ingredients are well combined, and everything is all cozy and warm. Then douse your pancakes with it and sail away to Happy Herbst Heaven.
* You MAY want to make extra or double these recipes because they won’t last long! ;-)
