Eat, Drink, & Be Mary!

Primal Pumpkin Ice Cream
1 cup pumpkin
1 can coconut milk
1 tsp. vanilla
1 Tbsp. pumpkin pie spice + 1 tsp. cinnamon
1/4 cup full-fat milk or heavy cream (organic/grass-fed preferred) - leave this out if dairy bothers you and the recipe will still be delicious
1/4-1/2 cup maple syrup, honey or sweetener of your choice
2 egg yolks (pastured preferred, tempered - see instructions)
Combine everything except yolks in a sauce pot on medium high heat and warm until almost simmering (don’t boil). Remove from heat. Take a ladle or two and add it to the yolks in a separate bowl, whisk together. Then whisk the egg yolk mixture into the ice cream batter. Pour into an air-tight container and cool for several hours or overnight. Pop it in your ice cream maker and follow the instructions or put the container in the freezer and whisk it yourself every hour or so.
